Chiayi County officials are promoting locally raised crocodile meat as a distinctive option for Mid-Autumn Festival barbecues. The county’s aquaculture department says crocodile, specifically spectacled caiman, has a mild flavor and firm texture that can be compared with chicken. Officials recommend skinless crocodile leg for grilling, while other cuts can be used in soups, stews, or traditional dishes. Chiayi is home to Taiwan’s largest concentration of caiman farms, and consumers can find more than 220 local aquaculture products online there.
