For decades, America’s dietary gospel was clear: fat was the enemy. Margarine replaced butter, skim milk replaced cream, and “low-fat” became a badge of virtue on every grocery shelf. But this week, that gospel met an unexpected heretic. Robert F. Kennedy Jr., in remarks that rippled through the nutrition world, urged Americans to eat more saturated fats — a message that left many health experts shaking their heads.

Kennedy’s comments, made during a podcast interview, framed saturated fats as “essential for brain and hormone health,” challenging long-held public health advice that links excessive intake to heart disease. It’s not the first time America has heard such a claim. From the rise of keto diets to the carnivore trend, the idea that fat is “good again” has returned with cultural vengeance — but the science, experts warn, hasn’t changed nearly as much as the marketing.

At the heart of the controversy is nuance. Not all fats are equal, but public messaging rarely survives nuance. Saturated fats — found in meat, butter, and cheese — do serve biological functions, yet decades of research continue to show that replacing them with unsaturated fats (from nuts, fish, and olive oil) lowers cholesterol and heart risk. The issue, doctors argue, isn’t about villainizing food but about balance.
